  • 210 g heavy cream
  • 5 g vanilla extract or 1/2 vanilla bean
How to do:
  1. Start by cutting the chocolate in small pieces. Put it in a large glass bowl.
  2. Heat the heavy cream, without boiling (under 100 ºC).
  3. Pour the hot heavy cream over the chocolate. Stir until all chocolate is melted.

Carrot Roll Cake

You'll need:
  • 1/2 kg carrot
  • 400 g refined sugar
  • 4 eggs
  • 200 g wheat flour
  • 1 tsp baking powder
  • zest of 1 orange
  • salt as needed
  • 1 cinnamon stick (optional)
  • butter to grease
  • flour to grease
  • powdered sugar as needed (to sprinkle)
How to do:
  1. Cook the peeled carrots on salted boiling water, with the cinnamon and orange zest.
  2. Turn on the oven at 180º C. Grease a squared cake tin with butter and flour.
  3. Grate the carrots to a large bowl. Add the sugar and stir until well incorporated.
  4. Separate the eggs whites from the yolks. Add the yolks to the previous carrot batter and mix. Set the whites aside.
  5. Sieved the flour and the baking powder to the bowl. Whisk until a homogeneous batter. Add some more orange zest.
  6. Beat the egg whites until stiff peaks. Start by incorporating a 1/3 of the whites to the mixture. Then, add the rest of the whites and gently fold.
  7. Pour the mix to the tin and place it in the oven for about 35 minutes.
  8. To give it the shape of a roll cake, remove the cake from the pan still hot and roll it. You can sprinkle some powdered sugar.
Walnut Cake

You'll need:
  • 6 eggs
  • 200 g walnut
  • 100 g wheat flour
  • 200 g refined sugar
  • 1 dstsp baking powder
  • 100 g butter
  • 3 tbsp milk
  • butter to grease
  • flour to grease
  • powdered sugar as needed (to sprinkle)
How to do:
  1. Turn on the oven at 180º C. Grease a round cake tin with butter and flour.
  2. Cut the walnut in small pieces and grind them with the flour and baking powder.
  3. In a bowl, mix the butter and sugar until they form a fluffy cream.
  4. Add the eggs, one by one, whisking after every adition.
  5. Now, it's time to add the walnut mix to the wet ingredients. Make sure that the mix is homogeneous.
  6. Finally, add the milk, little by little, whisking well.
  7. Pour the batter into the tin and put it in the oven for about 35-40 minutes.
  8. Take it from the oven and sprinkle the powdered sugar while still warm. You can also decorate the cake with whole walnuts.
Apple Muffins

You'll need:
  • 2 apples
  • 2 oranges
  • 80 g yellow sugar
  • 150 g wheat flour
  • 1 tsp baking powder
  • 50 g laminated almonds
  • 2 eggs
  • 2 tsp cinnamon powder
How to do:
  1. Cook the apples, drain and blend them.
  2. In a bowl, pour the apple puree, sugar and the squeezed orange juice. Set aside.
  3. In another bowl, mix the dry ingredients: flour, baking powder and cinnamon.
  4. Add the eggs in the wet mixture, one by one, whisking after every adition.
  5. Bring together the two mixtures, folding the dry ingredients into the wet.
  6. Distribute the batter for a muffins tray.
  7. Put an almond - or more! - on top of each muffin.
  8. Bake them in the oven for about 20-25 minutes. Enjoy!
Zucchini and Chocolate Cake

You'll need:
  • 1/2 zucchini
  • 3 eggs
  • 150 g yellow sugar
  • 172 cup olive oil
  • 300 g wheat flour
  • 60 g chocolate powder
  • 1 tsp baking powder
  • 1 tsp butter (to grease)
  • 1 tbsp cacao powder
  • 1 tsp vanilla extract
  • 1 tsp baking soda
How to do:
  1. Pre-heat the oven at 180 ºC.
  2. Wash thoroughly the zucchini and cut in pieces.
  3. Put the zucchini in a blender with the eggs yolks, sugar, olive oil and vanilla extract.
  4. Beat the egg whites until stiff peaks.
  5. Fold in the flour, baking soda, baking powder and chocolate powder. In the end, fold the egg whites.
  6. Grease a cake tin with butter and flour.
  7. Bake the batter for about 50 minutes.
  8. Take it from the pan and sprinkle with cacao powder.

Cookies

Sesame Biscuits
🕐Preparation time: 10 min
🕐 Cooking time: 15 min
Ready in 25 min
You'll need:
  • 100 g almond flour
  • 1/2 tsp baking powder
  • 90 g agave jelly
  • 80 g sesame paste (tahine)
  • 1 tbsp coconut oil
  • 1/2 tsp vanilla extract
  • sesame seeds as needed
How to do:
  1. Pre-heat the oven at 175 ºC.
  2. In a bowl, mix the flour and the baking powder. In another bowl, mix the agave, tahine, coconut oil and vanilla extract.
  3. Combine both mixtures until homogeneous.
  4. Divide the mixture in small balls and coat them with sesame seeds.
  5. Put them in a tray lined with baking paper and flatten them softly.
  6. Bake them for about 10-15 minutes, until they become golden. Take them off and let them cool on a net.
  7. You can store them in a box or a jar.

Curd Cheese Pie

You'll need:
  • 1 store-bought shortcrust pastry
  • 250 g refined sugar
  • 4 tbsp self-raising wheat flour
  • 2 tbsp butter
  • 2 curd cheeses
  • 5 eggs
How to do:
  1. Pre-heat the oven at 180 ºC. Roll out the shortcrust on a pie tin.
  2. In a large bowl, mix the sugar with the eggs until a fluffy cream.
  3. Add the flour and fold well.
  4. Melt the butter and add it to the mixture.
  5. Cut in small pieces or crumble the curd cheeses and add those.
  6. Pour over the shortcrust pastry and bake it for 35 minutes or until golden brown.
Apple and Berries Tart

You'll need:
  • 1 store-bought shortcrust pastry
  • 4 apples
  • 300 g fresh berries
  • Cinnamon stick, as needed
How to do:
  1. Pre-heat the oven at 180 ºC. Roll out the shortcrust on a pie tin.
  2. Peel and remove the stones of the apples. On a pot, cook the apples with a little bit of water aromatized with cinnamon sticks, at your taste.
  3. After cooked, remove the cinnamon sticks and puree the apples.
  4. Pour the puree into the shortcrust pastry.
  5. Bake for about 40 minutes. Add some berries on top and take it to the oven for more 5 minutes.

How to do:
  1. Inside a bowl, crush the banana with a fork.
  2. Add the flour, egg, a pinch of cinnamon and chia seeds.
  3. Mash all the ingredients together until a homogeneous mixture.
  4. Melt the butter and add it to the mixture.
  5. Cut in small pieces or crumble the curd cheeses and add those.
  6. Pour over the shortcrust pastry and bake it for 35 minutes or until golden brown.
